Ingredients for Creamy Chickn and Mushroom Rice Entree
- 1 small white onion courely chopped or 1/2 of a large onion
- 2 cups sliced cremini or white button mushrooms
- 8 to 10 oz. seitan strips, beef or chicken flavored
- 2 cups pre-cooked brown rice
- salt and pepper to taste
- 1 Not Chicken boillion cube dissolved in one cup hot water
- 1 cup soy or amlond milk
- 3-4 Tsp. flour
- 1/4 cup dry white wine
- 1 Tsp. soy sauce of vegan worcestire sauce
- 2 Tsp. grapeseed or canola oil
Method for Creamy Chickn and Mushroom Rice Entree
Add oil to hot pan. Add onion and saute on medium heat until slightly browned and turning translucent. Coat seitan strips in flour well and shake off any excess flour. Add to onions. Cook on meium to high heat until browning nicely and forming a “crusty” layer on the bottom of your pan. Add mushrooms and saute for 10 minutes, shaking pan ocassionaly to prevent sticking. Add the boillion / water broth and stir well. Add the wine and soy sauce. Stir in the cooked rice. Salt and pepper to taste. Cover and simmer on low heat for 10 minutes until mushrooms are soft. You should have a nice thick gravy at this point. Remove from heat and leave uncover for a few minutes. Then add the soy or almond milk slowly until you get the desired consistency. Serve immediately.
